Fish Tacos

Tom Flavins Homemade Fish Tacos
Ingredients
- 1 ripe mango or Papaya, peeled and finely chopped
- 1 red onion, finely chopped
- ½ cucumber, peeled, quartered, seeds removed, chopped
- 1 red pepper deseeded and finely chopped
- ¼ bunch roughly chopped coriander
- 8 small tortilla wraps
- 4 fresh sole fillets
- 1 baby gem lettuce
- 100ml sour cream
- 5 ml rapeseed oil
- Salt & pepper
Method
1. In a bowl, mix and season the mango/papaya, onion, cucumber, pepper and corriander.
2. Wash & dry the lettuce leaves, set aside
3. Heat a frying pan, add a drizzle of oil and place seasoned sole fillets on the pan. Turn after 2-3 mins and cook for a further 2-3 mins until the flesh is firm to touch
4. To make taco, heat the wraps for 30 seconds in microwave or oven and lay on a warm plate. Place the washed lettuce leaves on the wrap and place sole on top, followed by the salsa and a drizzle of sour cream, fold over & enjoy!
