Sesame Crusted Cod Goujons

Thousand Island Dip

Ingredients

  • 150gr Cod fillet cut into finger size strips
  • 50gr flour
  • 1 egg
  • 20 ml milk
  • 50 gr fresh breadcrumb
  • 10 gr Sesame seeds
  • 100 gr Mayonnaise
  • 100 gr Tomato ketchup
  • ¼ Red pepper (diced, brunoise)
  • ¼ Yellow pepper (diced, brunoise)
  • ¼ Green pepper (diced, brunoise)
  • ¼ onion (diced, brunoise)
  • ½ lemon juiced
  • Small bunch parsley (Chopped)
  • Salt & Pepper to taste
  • 100 ml vegetable oil

Method

1. Season the flour with salt & pepper and place in a small tray/container

2. In another tray whisk the egg and milk together and in a third tray mix the sesame seeds and breadcrumbs

3. To make thousand island dip mix mayonnaise, ketchup, peppers, onion and herbs season with salt pepper and lemon juice

4. To panne the fish goujons first coat them in the seasoned flour, followed by dipping them in the egg wash and finally the bread and sesame mix. For a good crusty coating place back in the egg wash and breadcrumb mix for a second time to ensure completely covered in crumb.

5. To shallow fry, heat the vegetable oil in a pan to approx. 170 ̊C

6. Place the fish goujons in the hot oil ensuring to splash away from your hand, seal on all sides by turning in the oil after 2-3 mins

7. Remove from oil with fish slice or spider and allow to rest on paper towel to remove excess oil

8. Serve as starter with thousand island dip and lemon wedge or with chips and mushy peas as a main course
