Vegetable Burger

Ingredients
- 1 Sweet Potato peeled & Grated
- 1 Rooster Potato
- 200g Cooked Chickpeas
- 200g Lentils cooked
- 1 Onion (diced)
- ½ bulb Garlic (chopped)
- 1tsp Paprika
- 1tsp Cumin
- 1tsp Fennel seeds
- 1tsp Tumeric
Method
1. Grate the sweet potato
2. Steam the rooster potato skin on
3. Cook the lentils in boiling water until soft
4. Sweat the onion and garlic in the oil until translucent
5. Add the spices and cook to release the flavours
6. Mix all ingredients together and blitz
7. Season with salt & pepper
8.Portion into shape of burger and allow to cool
9. Panfry and finish heating in the oven
10.Serve on toasted burger bun with ruby slaw and tomato relish
